France is famous for its delicious cheeses, all of which pair beautifully with a glass of St. Stefanus. But in the winter, we think you deserve something a little more indulgent. For the cheese fondue:
• 1 clove of garlic (halved)
• 500ml dry white wine
• 1 tablespoon cornstarch
• 200g Comte cheese
• 200g Emmental cheese
• 200g Gruyere cheese
• A pinch of ground nutmeg
• A pinch of black pepper
• A pinch of ground paprika
• Chunks of crusty bread
Rub the inside of a large saucepan with the cut side of the garlic. After covering the base of the pan, discard the garlic and place the pan over a medium heat.
Add the wine and cornstarch and bring it to the boil. Lower the heat to a simmer and add the cheese, nutmeg, black pepper and paprika.
Keep a close eye on the pan, stirring constantly until the fondue has melted to form a smooth, cheesy sauce.
Continue cooking the fondue for 15 minutes, allowing it to thicken while ensuring that it never boils.
Slice the chorizo into 1/2cm thick slices and serve with hearty chunks of crusty bread and – of course – a few glasses of St. Stefanus.
