Summer’s here, so now’s the perfect time to bring your barbecue out of hibernation. When it comes to barbecue classics, it’s always tough to top chargrilled chicken. But chicken with beer is even better! Featuring a zingy marinade packed with fresh lime, succulent honey and the fruity flavours of St Stefanus Blonde, this zesty barbecue chicken recipe locks in the juices for a moist and meaty mouthful. Give it a try and get your taste buds straight into the summer spirit. Recipe for St. Stefanus BBQ Chicken: Prep Time: 10 min (30 min marinade) Cook Time: 14 min Total Time: 54 mins Serves: 2-4 (depending on how hungry you are) Ingredients: 1 33cl bottle St. Stefanus Blonde (preferably 3 months) Zest/juice 1 lime 1 tablespoon honey ½ teaspoon ground coriander Salt and pepper 2 cloves garlic, minced 4 chicken thighs Instructions: In a bowl, mix the lime juice, beer, honey, garlic, coriander, and salt and pepper until the honey dissolves. Pour the mixture over the chicken, cover and marinate for 30 minutes, or longer for a fuller flavour. Fire up your barbecue to a medium heat and lightly oil the grill. Remove chicken from marinade and shake off excess; discard remaining marinade. Grill chicken until tender and juices run clear, about 7 minutes per side.
